One of the added benefits of inviting people into your home is the cross-cultural exchange of ideas and food styles. A few years back, we hosted a couple from USA, who were raw foodists. We gave them open entry to the kitchen and were amazed by the wonderful meals they rustled up, using much of our foods growing in the backyard. One favourite we have periodically made, are these Superfood Raw Brownies. There was no specific recipe they left, rather a skeletal outline of ingredients.
The great thing about this recipe is that you can use nothing you have on hand, changing any of the nuts, seeds or dried fruits, depending on what you have on hand. I have created a basic template to follow, but feel free to exchange, swap, increase or decrease according to taste. Place all ingredients together and blend in small quantities.
Superfood Raw Brownies
1/2 cup each of the following;
- Oats,
- Cashew nuts,
- Almonds,
- Pumpkin seeds,
- Raisins,
- Desiccated coconut
1/4 cup each of the following;
- Cacao beans,
- Goji berries,
- Sunflower seeds
Add 1 cup chopped dates
Add 1-2 Tbspn each
- coconut oil,
- honey
Optional extras: macs and mornings powder, chia or rice bran, cacao nibs, pinch Himalayan salt
Mix ingredients in a big bowl, then blend in smaller quantities until desired texture is reached, similar to coarse breadcrumbs. If your mixture doesn’t stick together easily, add a Tbspn lime or lemon juice and a small amount hot water. This allows it to hold together better and simply press this nutrient-packed mixture into a small baking tray. Press firmly with the back of a spoon. Place in fridge for a couple of hours to chill and set firmly. Cut into squares and enjoy this power-filled snack any time of the day!
The most difficult part of this recipe, is trying to ration oneself and not devour the brownies in one sitting! Delicious and nutritious! Keep in the fridge.
