I needed a half cup of peanut for my Spicey Peanut Satay sauce and found that I was out of stock, so I thought laterally…….how can I make this, I’m sure I can! Fossicking in the grocery cupboard uncovered some raw shelled peanuts. That’s a start! So a quick google search and I found a recipe online. Nothing too tricky there….a few adjustments and I was so enthralled by my home-made peanut butter, as was everyone else I asked to taste test it, all declaring it was the very BEST peanut butter EVER!
Thanks to inspiredtaste.net and a few minor alterations, this is the easy peasy recipe;
Utter Amazing Peanut Butter Recipe
1 1/2 – 2 cups raw, skinned peanuts
1/2 -1 tsp salt (to taste)
1 tsp honey
1 – 3 TBspn vegetable oil of choice (I used sunflower)
Place peanuts in a shallow tray in oven at 150deg.C till lightly browned. Be aware that this does not take long 5-10 minutes and turn them often so that they do not burn. Allow the nuts to cool, then place them in a blender and pulse till they are finely chopped. Add the other ingredients and blend on high speed till you reach the desired consistency. Add more or less oil, as you prefer.

So two days later and we have less than half a jar and I still didn’t get to make Spicey Peanut Satay Sauce! No worries, it’s so easy to make I’ll whip up some more tomorrow!
